The nearby Suaza River provides fresh water for both cultivation and processing, creating an environment where quality and nature go hand in hand.\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003eThis remarkable lot is the result of Rodrigo’s passion for research and innovation. His journey started in 2016, inspired by winemaking techniques where cooler fermentation temperatures help preserve and enhance delicate floral and fruity aromas. Rodrigo began experimenting with freezing pulped coffee, and although the first attempts were not successful, they revealed hints of the profile he was searching for. This encouraged him to continue exploring different temperatures, sugar levels (Brix), and coffee varieties until he found the perfect balance.\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003eThe cherries for this lot are selectively handpicked at peak ripeness, with farm workers trained to harvest only cherries between 26 and 30 Brix degrees. After harvesting, the cherries are floated and carefully sorted to remove any underripe or damaged fruit. Only the highest-quality cherries continue into processing.\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003eThe coffee is then placed in GrainPro bags and fermented in an industrial fridge at 10–14°C for 76 hours. This controlled cold fermentation slows microbial activity, allowing the coffee to develop its complex fruity and floral character. After fermentation, the parchment is washed with clean water and dried carefully: first in direct sunlight on parabolic beds, followed by a slower drying process on raised beds in the shade.
